Introduction

You can eat this protein-rich chia fruit pudding after either a light or an intense workout. Add 40 to 80 grams of granola as a topping—depending on the intensity of the workout—to replenish sufficient carbohydrates. You can also serve the chia fruit pudding warm or cold, making it suitable for any season. My personal favorite is the blueberry fruit pudding with shredded coconut and a few cashew nuts, but feel free to create your own version. Enjoy!

Instructions

  1. Heat the frozen fruit in a deep pan.
  2. When the fruit becomes warm and soft, add the honey and chia seeds. Let it simmer for a few more minutes over medium heat.
  3. Remove the warm fruit from the heat and let it cool slightly. This will now form a chia pudding. If you want to eat it warm, you can serve it immediately; otherwise, put it in the refrigerator.
  4. Take two small bowls and divide the skyr into two 200-gram portions.
  5. Add the chia fruit pudding to each bowl and top with your chosen toppings.
  6. Enjoy your nutritious recovery meal!
